Independence Day Protein Cheesecake

Healthy food comes with a stigma – people automatically think it tastes like dirt but that is so not that case with this cheesecake. Whenever I’m asked to bring a dessert for a fun gathering amongst friends & family, I make sure to disguise how healthy it is until AFTER everyone has had a bite, or two for this exact reason.


Summoning the God of Sun, Ra

This cheesecake recipe is satisfying and perfect if you’re on a high protein, low fat diet or if you want to maintain a healthy diet regardless of it being a holiday weekend.

Bring it to your friends and families 4th of July celebration this weekend – you should probably make two…I guarantee people will want seconds!

Strawberry Cheesecake



  • 2 scoops vanilla protein
  • 2 eggs
  • 12 oz fat free cream cheese
  • 2 containers of fat free strawberry greek yogurt
  • 3 tablespoons of sugar free jelly with fiber
  • 250g strawberry
  • 2 tablespoon lemon juice
  • 1/4 cup sweetener


Mix everything in a food processor or a Vitamix

  • bake at 325 for 30 min
  • drop to 200 for an hour
  • refrigerate for 4+ hours

Coconut Banana Chia Ice Cream

I came across this recipe on a lovely vegan blog I just discovered- Naturally Meghan. My jaw dropped when I read that I could eat dessert for breakfast. DESSERT FOR BREAKFAST? Thank you, Meghan!

Many people go without breakfast because they don’t have time to cook in the morning. Well, problem solved. Coconut Banana Chia Ice Cream is quick to make and it’s packed with fiber and healthy fats.

You don’t have to follow my exact recipe but it’s a great starting point. I can see a chocolate coconut banana ice cream in my near future! Mmmm chocolate for breakfast (Homer voice.)

Coconut Banana Chia Ice Cream

Coconut chia banana ice cream


  • 2 ripe bananas, sliced and frozen overnight
  • 1 tablespoon chia seeds
  • 1 teaspoon coconut oil (I use the 365 Whole Foods brand)
  • 1/2 cup unsweetened coconut milk (I use So Delicious)
  • 1 tablespoon pure vanilla extract
  • dash of cinnamon for garnish
  • fruit for garnish (I used pomegranate)


  1. Mix bananas and coconut milk in a food processor or a powerful blender for 40 seconds
  2. Add remaining ingredients. Mix until everything is incorporated and you have a soft serve ice cream consistency
  3. Garnish with fruit and a dash of cinnamon


It’s that easy. If you have a high-quality food processor, you don’t need anything more than the bananas to make a bowl of ice cream. But it’s so much fun to experiment. Give it a go!



Pumpkin Spice Pancakes

A few weeks ago  my lovely friends at So Delicious sent me boxes full of their new holiday line! I noticed a recipe for Pumpkin Spice Pancakes on the back side of the Pumpkin Spice flavored Coconut Milk container.

O M G! Pancakes + Pumpkin Spice? HEAVEN! 

I immediately dusted off my KitchenAid Mixer and began recreating this amazing, seasonal recipe. You guys know I hate following recipes but this one is worth following. The pancakes came out fluffy, with crispy edges and they had the perfect amount of pumpkin flavor without being overbearing.

Use fresh butter and pure maple syrup to enhance the pumpkin flavors. Seriously guys, this pancake is HEAVENLY! Enjoy this recipe for breakfast or do as the Spaniards and enjoy your pancakes for dessert!

Summer Solstice Smoothie Popsicles

Tomorrow is one of my favorite days of the year, the summer solstice aka the first day of summer! It’s also the longest day of the year with 16 hours of daylight so I am going to take full advantage. Rising with the sun on the first day of summer sounds magical but to be honest, I’m tired so I’ll most likely use my eye mask tonight and sleep past 6am. As for yoga and popsicles? It’s on! I can’t think of a better way to celebrate the summer solstice than with a series of Sun Salutations and my favorite summer popsicle recipe. Ah, sweet sweet summer.

Popsicle molds are sold everywhere this time of year. I have two plastic molds, both a set of 6, from Target that cost less than $3 each. You can also use dixie cups to make the pops. My molds are starting to crack so I’m considering buying this set of super cool stainless steel molds! So.Cool.

Island Green Smoothie

Oh Hayyy! I hope everyone is having a great Memorial Day weekend! I am a walking tornado-my blog is all over the place and life keeps throwing hurdles at me, which is fine but I am running out space in my Moleskine! I know, first world problems.

What are you guys doing to celebrate the holiday? BBQ? Vacation?  I will be working during the day, and hopefully finding time tonight to relax. I am writing this on 4 hours of sleep so bare with me.


I flew back from Miami on the 13th-the trip was interesting to say the least. Auditions, work, beach…I think it’s time I move back to FL Overall, the trip was wonderful-I left my heart and my Canon Rebel in Miami so I think another trip is in order…asap.

The next morning, I went straight to an appointment. From there I drove to New Hampshire to babysit Christopher (5 yrs old) and Sofia (9 years old.) I worked for their awesome family as a nanny a few years ago. Their mom and dad were away for the weekend so I was staying overnight with the kiddies for the first time. Uh oh!

Once I settled in at their house, I went outside and waited for Christopher and Sofia’s bus to arrive. The big yellow bus  stopped in front of their house and out came 2 running children with their arms open wide. It was such a lovely welcome! Though I kept in touch, I had not seen the kiddies in a year. We jumped on the trampoline, ordered pizza, watched cartoons, and played Super Mario Brother’s. When I was their nanny, Christopher would make me play Super Mario every day-I developed what the kids call, “Mario Thumb” aka callouses haha.


We took a break from jumping on the trampoline to take a quick selfie!


How adorable are they? I could not believe how much they had grown up in just one year. I was worried that Christopher was too old for story time and snuggles but as you can see in the picture, he still loves a good story before bed. He picked out Laura Numeroff’s “When You Give a Mouse a Muffin.” Christoper LOVES this book and to my surprise, he read the book out loud to me! He may have memorized the book by now but whatever- he was reading to me! Kids, they grow up so fast hehe. After we read, I tucked him in and joined Sofia downstairs. I painted her nails while we watched the Disney Channel. Before she went to bed, she told me she could not believe I did not have a boyfriend and that I need to find someone to marry soon. She is worried that I am going to be alone , in a big house with a dog and no one to take care of me hahaha. Sofia is a riot.

Between jumping on the trampoline, picking up after dinner, emptying then packing their lunch boxes for school, giving them baths, etc,. etc. I surprisingly did not feel defeated. I still had some energy left! How you ask? Well, let me tell you my secret- a large Island Green Smoothie. This smoothie should be called the “Superwoman Smoothie.” I sip a large smoothie throughout the afternoon and it keeps me satisfied and energized for hours while also curbing my sugar cravings.

Oven Baked Bacon

Bacon Strips

Most weekends I wake up with the urge to make an incredible breakfast- fresh squeezed orange juice, sliced berries accompanied with a delicious tartine, and a hot latte served with a side of crispy bacon. Then I remember how much I hate doing dishes. Do you know what happens next?

I remember my recipe for 100% hands-off baked bacon, get my butt out of bed, slip into my fuzzy slippers (thanks Mom!) and into the kitchen. This recipe is done my favorite way, without a measuring cup which is why I love it so…oh and because I love bacon.

Seriously, this recipe is fool-proof and if you dislike cleaning up as much as I do, you’ll forget about cooking bacon on the stove. No more splattered grease stains on your shirt, hooray!

With your bacon in the oven, you can focus on making sure your eggs don’t overcook, or turn all your attention to flipping your pancakes at justtt the right time. (I hate when I flip too soon!) Or you can spend time enjoying your morning coffee, chatting with your family, or doing anything besides standing over hot, greasy bacon.

Crispy Bacon

Another reason I love this recipe is because it eliminates the temptation to “test” the bacon as it cooks. Yah, you bacon lovers out there know exactly what I’m talking about. My sister and I like to call those disappearing pieces, “test bacon”, and yes, it’s a real thing.
